- Wash and slice the bitter gourd.
- Sun-dry it for 1-2 days until it turns crisp.

- Dry roast urad dal, chana dal, red chilies, jeera, and dhaniya until golden brown.
- Add tamarind and hing while roasting.
Step 3 –Grinding the Podi
- Grind the dried bitter gourd along with the roasted spices into a fine or coarse powder.
- Store in an airtight container.
