Ingredients for Gongura Chicken Pickle

  • For the Chicken:
    • 500g boneless chicken, cleaned and cubed
    • 1/2 teaspoon turmeric powder
    • 1/2 teaspoon salt
  • For the Pickle Base:
    • 2 cups fresh gongura leaves (sorrel leaves)
    • 1/2 cup oil (gingelly or sunflower oil)
    • 2 tablespoons red chili powder
    • 1/2 teaspoon fenugreek powder
    • 1 teaspoon mustard seeds
    • 1/2 teaspoon cumin seeds
    • 5–6 garlic cloves, minced
    • Salt to taste

Cooking Instructions

Step 1: Preparing the Chicken

Marinate the chicken pieces with turmeric powder and salt.
In a pan, heat 1 tablespoon of oil and sauté the chicken until fully cooked. Set aside.

Step 2: Cooking the Gongura Leaves

Wash and dry the gongura leaves thoroughly.
In a separate pan, add 1 tablespoon of oil and sauté the gongura leaves until soft and mushy. Let them cool and grind into a coarse paste.

Step 3: Preparing the Pickle Base

Heat the remaining oil in a pan.
Add mustard seeds, cumin seeds, and garlic. Sauté until the garlic turns golden.
Add red chili powder, fenugreek powder, and salt to the oil. Mix well.

Step 4: Combining the Ingredients

Add the sautéed chicken and gongura paste to the pickle base.
Cook the mixture on low heat for 10–12 minutes, stirring occasionally.
Adjust the salt and spices as needed.

Step 5: Storing the Pickle

Once cooled, transfer the pickle into an airtight glass jar.
Store in a cool, dry place or refrigerate for up to 2 weeks.
