Ingredients:

  • 1 cup toor dal (split pigeon peas)
  • 2-3 dried red chilies (adjust to taste)
  • 1 tablespoon chana dal (split chickpeas)
  • 1 tablespoon urad dal (split black gram)
  • 1 teaspoon cumin seeds
  • 1 tablespoon sesame seeds (optional)
  • 1 tablespoon grated dry coconut (optional)
  • 1-2 tablespoons oil (optional, for roasting)
  • Salt to taste

Instructions:

  1. Dry Roast Ingredients:
    • Heat a dry skillet over medium heat. Dry roast the toor dal until it turns golden brown and starts to emit a nutty aroma. Remove from the skillet and set aside.
    • In the same skillet, dry roast the chana dal, urad dal, and dried red chilies until they are golden brown and aromatic.
    • If using, add sesame seeds and grated dry coconut towards the end and roast for an additional minute or two. Be careful not to burn them.
  2. Cool the Ingredients:
    • Allow all the roasted ingredients to cool completely. This prevents the powder from becoming clumpy.
  3. Grind the Powder:
    • Once cooled, place all the roasted ingredients (toor dal, chana dal, urad dal, red chilies, sesame seeds, and grated coconut) in a blender or spice grinder.
    • Add salt to taste.
    • Grind everything into a fine or coarse powder, depending on your preference.
  4. Store the Powder:
    • Transfer the Kandi Karapodi to an airtight container.
    • Store it in a cool, dry place. It should stay fresh for several weeks. For longer shelf life, you can keep it in the refrigerator or freezer.
