Ingredients:

  • Fresh ginger: 250 grams (about 1 cup, peeled and sliced thinly)
  • Lemon juice: 1/4 cup
  • Mustard seeds: 1 tablespoon
  • Fennel seeds: 1 tablespoon
  • Turmeric powder: 1 teaspoon
  • Red chili powder: 1 teaspoon (adjust to taste)
  • Cumin seeds: 1 teaspoon
  • Salt: 2 tablespoons (adjust to taste)
  • Sugar: 1 tablespoon (optional, adjust to taste)
  • Oil: 2 tablespoons (preferably mustard oil or any neutral oil)

Instructions:

  1. Prepare the Ginger:
    • Peel the ginger and slice it thinly. You can also cut it into small julienne strips if you prefer.
  2. Dry Roast the Seeds:
    • In a small pan, dry roast the mustard seeds, fennel seeds, and cumin seeds separately until they release their aroma. Be careful not to burn them. Let them cool.
  3. Grind the Seeds:
    • Once cooled, grind the roasted seeds into a coarse powder.
  4. Mix Ingredients:
    • In a bowl, mix the sliced ginger with turmeric powder, red chili powder, salt, and the ground seed powders. If you like a bit of sweetness, add sugar to taste.
