Mustard oil or sesame oil – 3 tbsp
Vinegar or lemon juice – ¼ cup

How to Make Cauliflower Pickle at Home (Step-by-Step)
Step 1: Prepare the Vegetables
Wash cauliflower florets and carrots thoroughly.
Dry them completely to remove all moisture, as water can spoil the pickle.
Step 2: Blanch the Cauliflower (Recommended)
Boil water with a pinch of salt.
Blanch cauliflower and carrots for 2–3 minutes.
Drain and let them cool fully, then pat dry.
Step 3: Prepare the Spice Powder
Dry roast mustard seeds, fenugreek seeds, and cumin seeds on low flame until aromatic.
Cool and grind into a coarse powder.
Step 4: Heat the Oil & Temper Spices
Heat mustard or sesame oil until slightly smoky.
