Ingredients:
- 1 cup toor dal (split pigeon peas)
- 2-3 dried red chilies (adjust to taste)

- 1 tablespoon urad dal (split black gram)
- 1 teaspoon cumin seeds
- 1 tablespoon sesame seeds (optional)
- 1 tablespoon grated dry coconut (optional)

Instructions:
- Dry Roast Ingredients:
- Heat a dry skillet over medium heat. Dry roast the toor dal until it turns golden brown and starts to emit a nutty aroma. Remove from the skillet and set aside.
- In the same skillet, dry roast the chana dal, urad dal, and dried red chilies until they are golden brown and aromatic.
- If using, add sesame seeds and grated dry coconut towards the end and roast for an additional minute or two. Be careful not to burn them.

- Add salt to taste.

- Transfer the Kandi Karapodi to an airtight container.
